New York — we’re just getting started

Healpies is opening a small New York chapter, starting with a Saturday table at the Roosevelt Island farmers market. Everything is baked in a registered gluten-free home kitchen under New York State’s Home Processor rules.

Those rules decide what comes to market: everything that travels well and needs no refrigeration. Everything else — cream cakes, cheesecake, coffee, breakfasts — stays where it belongs, in the cafés.

What that means for you: every item at the table is sealed and labelled before it leaves the kitchen, with the full ingredient list and allergens on it. Nothing is cut, plated, or assembled on site.

We bake in small batches and the bread usually goes first. Tick what you want — the button writes the message for you, you just send it.

Nothing is sent automatically — the button just opens your own app with the message ready. This site collects nothing and loads nothing from anywhere else.

The kitchen

There is no wheat in the building

Not in a sealed bin. Not on a high shelf. Not “just for one recipe.” Flour goes airborne and settles for hours, so the only honest way to run a gluten-free kitchen is to not have any wheat in it.

We use no wheat, rye, or barley in any form. Separate pans, mixers, sieves and boards. Oats only when they are certified gluten-free.

We are a bakery, not a laboratory, and we don’t give medical advice. We are simply very careful about what goes into the dough — and happy to show you the paperwork on any ingredient.

No white sugar

We sweeten with natural sugars and fruit. It’s a flavour decision — it keeps the dessert light instead of flat.

Vegan & lactose-free

Not a separate shelf for “special” customers — just part of the normal menu, marked so you can see it.

Almond & rice flour

The base of nearly everything. The keto line goes further and uses no starch at all.

Our story

It started with one stubborn belief

That “gluten-free” should never sound like an apology. The idea started in 2020, right at the beginning of the pandemic, and within two years it had grown into cafés in Astana and Almaty. Five years on, people come to us because the cake is good — not because it’s the only thing they’re allowed to eat.

Healpies is run by Madina and Aruzan. One afternoon a climber walked in who had found us through an app that maps safe places for people with celiac disease — that was how he was travelling across Kazakhstan. It’s still the best review we’ve had.

Madina is in New York now. The recipes came with her.

The things people ask

So how do you actually say it?

Heal-pies. First half rhymes with wheel, second half is pies. Nearly everyone reads it as “help-ies” the first time, and honestly we stopped correcting people a while ago — we answer to both.

Is everything really gluten-free?

Yes. There is no wheat, rye, or barley anywhere in a Healpies kitchen — this isn’t a gluten-free shelf inside a regular bakery, it’s the whole kitchen. If a particular ingredient matters to you, ask us; we keep supplier documentation.

Can I order a birthday cake in New York?

Not yet. New York’s home-kitchen registration doesn’t allow custom or decorated cakes — only standard, pre-packaged ones. Custom cakes exist in Almaty and Astana, and they’ll come to New York when we move into a commercial kitchen.

Do you deliver or ship?

Kazakhstan: yes — Wolt, or call the café directly.
New York: market pickup for now. Home-kitchen rules allow shipping only within New York State.

Will there be coffee at the market?

No. Any brewed drink needs a separate permit and a commercial kitchen. Bring your own — we’ll handle what goes next to it.

What about allergens other than gluten?

We work heavily with almond flour, eggs and dairy, so nuts, eggs and milk are present in the kitchen. Every package is labelled. If an allergy is serious, message us first and we’ll tell you honestly what is safe.
